Thanksgiving Round 2

There's always leftovers for everyone to take after Thanksgiving, and it's become a tradition now to repurpose them in one way or another. While I spent some time living at home this fall in preparation for a cross country move, my mom had the idea for this year's leftover makeover --- pasties.

My mom and I watched The Great British Baking Show together every week, so when she suggested making pasties filled with leftovers, I thought it was the perfect evolution of my first-place Thanksgiving pie from a few years ago. Besides, you can never have enough pie around Thanksgiving.

Thanksgiving Pie from a friendly pie-off

The pasties are simple to make. One tastes like all of Thanksgiving in a bite, and the other is a variation of pierogis (because the only way to make mashed potatoes better is to add cheese to them). For both recipes you'll need:

  • 1 Pie Crust (I like the recipe from All Recipes)

  • 1 egg (for egg wash)

Roll out the pie crust into a rectangle and cut into rectangles. Place whatever filling fits your fancy before crimping the edges tightly shut. I'm notorious for overfilling anything similar to dumplings, so be sure to put less filling than you think you need! Put back in the fridge for 10 minutes before brushing the egg wash on top. Bake for 15-20 minutes at 425.

Use a fork to easily crimp edges

Thanksgiving Pasty

  • Turkey

  • Sweet potato casserole

  • Cranberry Sauce

  • Optional: gravy for dipping

Pierogi Pasty

  • Mashed potatoes

  • Cheddar cheese

  • Chopped rosemary

It means a lot when friends and family want to be a part of my interests. It was fun getting to work with my mom on this, and am looking forward to doing more collaborations in the future! While it’s not recipe-related, I’m really excited about an upcoming collaboration for Scrap Eats that will debut soon. It’s been a year friends, let’s finish it off strong and positive (or simply just treating yourself with tasty food).

Happy Holidays!
